Deconstructed Gizzdodo

The initial plan was to make Gizdodo but then I decided against it, instead I assembled the ingredients on a skewer. In other words deconstructed gizdodo.

Happy 60th independence day Nigeria(ns).

How did you celebrate? I know many of us feel disillusioned about the current state of things in the nation. However I would like to take this opportunity to remind us that if each one of us, committed to playing a role in being the change we want, change would happen sooner rather than later.

One thing I know binds us together rather than divide us is food. I’d love to explore more food from across all geopolitical zones of Nigeria. So we can continue to share our love for food together on this space.

I charred these on open fire a bit just for effect.

I like to describe Gizdodo as a happy marriage of fried plantain, fried gizzard and peppered stew, so it’s weird that I’m split the happy couple. Lol.

Recipe

Ingredients
  • Ripe Plantains
  • Chicken Gizzard
  • Coloured Bell Peppers
  • Vegetable oil for frying
  • Onion
  • Spices (curry powder and thyme)
  • Seasoning cubes
  • Salt
  • Skewers

Procedure

  • Cook gizzard with onion, salt, seasoning cubes, spices, water till well done.
  • Chop plantains into rounds or cubes
  • Chop coloured peppers into cubes
  • Deep fry plantains till golden brown
  • Deep fry gizzard
  • Assemble pepper, plantain, gizzard on a skewer and serve.
You can grill instead of frying for a healthier version.
