Acha is grown in Nigeria mostly in the northern parts, it is native to West Africa and is said to be one of the oldest grains ever cultivated.

Fonio has a very low glycemic index, so it is absorbed into the body slowly and doesn’t cause spikes in the blood sugar levels that other refined grains do. It also contains sulphur, chromium and amino acids that help to control diabetes and studies have indicated that eating. Fonio might be a way to control blood sugar levels in diabetics.

Recipe

Ingredients (serves 2)
  • ¾ cup Fonio flour
  • 2 eggs
  • ¼ cup milk
  • ¼ cup water
  • 1 tbsp sugar (or sweetener of choice)
  • ½ tsp vanilla
  • a pinch of salt
  • ⅛ tsp baking soda
  • ⅛ tsp baking powder
  • *a pinch of all spice (nutmeg,cinnamon,ginger) *optional*
  • Vegetable oil to brush on pan
*vegans can skip eggs and replace milk with plant-based milk of choice.

Procedure

  • In a bowl mix all the ingredients except the oil together with a whisk.
  • Place a pan on medium heat, once warm brush with oil and leave to get hot, and turn the heat down
  • Stir before scooping into the pan, small scoops are recommended.
  • Flip over once the top starts pop bubbles. Ensure both sides are golden brown

Serve warm with butter, honey and a side of fruits.
