Take your taste buds on a tropical adventure with a delicious blend of pineapple and coconut! If you like you can make a garland of flowers, hang it around your neck and pretend you are on a tropical beach.

When my business “Fontaine De Vie” was still a virgin cocktail business, one of the best sellers on our menu after “Chapman” was our PinaColada. Guests at parties we served would always ask for second helpings and thirds if they could. It is a drink to love. And it can be enjoyed by anyone.

A virgin cocktail or mocktail is a non-alcoholic blend of drinks. To make Virgin PinaColada or PinaColada Mocktail, you need just two basic ingredients; Pineapple Juice and Coconut Milk.
Recipe
Ingredients (serves 5-6)
- 4 cups Pineapple Juice
- 1½ cup Coconut Milk
- ½ tsp vanilla essence
- Ice cubes
Optional ingredients - Sugar or sugar syrup (unnecessary because pineapple juice is sweet)
- ¼ tsp Pineapple flavour
- ¼ tsp coconut flavour
Procedure
- In a blender at medium speed, mix pineapple juice and flavours.
- Slowly add coconut milk. Once the coconut milk is completely added, blend for an additional 15 secs. In the absence of a blender, mix thoroughly by hand or use a cocktail shaker. (The reason a blender is recommended is that the acidity of pineapple juice will split the coconut milk if it is not mixed in at a fast speed to ensure the milk properly incorporated)
- Serve with ice cubes.
- Garnish as you desire, with a pineapple wedge, mint, a glazed cherry…
